Title: Kookin Korner

jerseyfan4kahne - February 4, 2005 04:20 PM (GMT)
Hey everybody! I just wanted to try to see if this would be a successful post for recipes. I will see how it works out and if it does well I will pin it. In the post you can talk about foods you like, recipes that worked or didn't work for you, advice on cooking, your expert recipes, online recipes, and titles of good recipe/food books. I love cooking so if anyone needs any help let me know lol

Wayne!

My best recipe comes off the box of Philadelphia Cream Cheese. LOL I make a mean cheesecake but it comes off the box.

I bake more than I cook, though. Cooking blah - if it doesn't involve opening a box, peeling off plastic and popping it in the microwave, then forget it! It's just hard to cook for one person!

SPINACH QUESADILLA

1 cup sliced mushrooms

1 clove garlic chopped

Pam olive oil

9 oz. Cooked chicken breast (skinless, boneless) cut

and garlic on medium heat for approximately 5 minutes.

turning to make sure that it does not burn. Drain any
liquid that might have collected in your pan. Spoon
chicken and spinach mixture onto ˝ of tortilla, top
with salsa and peppered jack cheese. Fold over
tortilla and nuke 30 seconds in microwave so cheese
will melt.

For lower points, leave out chicken

SEVEN LAYER BEAN DIP

2 cans of Re-fried Beans
1 8 oz. tub of Sour Cream
1 tub of Guacamole
Taco Seasoning
1 Lb. Ground Beef
Mild Chi Chi's salsa
1 cup shredded Cheddar Cheese
1 cup shredded Monteray Jack Cheese

Brown ground beef in a sauce pan, drain and mix in Taco seasoning as directed on package. Pre-heat oven to 350*. Spread re-fried beans in the bottom of a large glass baking dish. Next spread ground beef over the top (do not mix, just layer it on top). Now spread sour cream, then layer Guacamole (you can blend these two together to save time if you want). Sprinkle the two types of cheese evenly over the top (use more or less than 1 cup of each depending on your tastes). Place the dish, un-covered, in the oven until the cheese is completely melted and it is "bubbly". Remove from oven and sprinkle some salsa over the top (more or less to suit your taste). Serve with Tortilla chips! :)

I don't usually measure. I'm bad. I throw stuff in becuase a real chef doesn't measure lol. But if its too liquified but more beans in or you can put already made chili to make it thicker.

no measurements are really exact...

but:

a twist on ratatouille:

1 tomato
1 zucchini
1 sweet onion (NOT red)
parmesan cheese (grated or shredded, your choice)

slice *very very* thinly
use a skillet and a glass lid if possible (must have lid)

layer onion on the bottom, since it will tend to carmelize instead of burn, then zucchini and then tomato, repeat a few times laying everything flat (you dont have to fill up the entire pan, just make sure it lays flat)... do 3 or four layers of onion-zucchini-tomato ... top with parmesan cheese, put the lid on and cook over LOW (even simmer, after awhile) heat for ... oh, at least 20 minutes. it's done when you stick a fork in it and theres no resistance at all pushing to the bottom.

greek salad:

1 container feta cheese (like athenos brand sized)
1 can jumbo olives, pitted
1 red onion (must be red onion)
1 head lettuce
3 or 4 roma tomatoes
1 bottle hot rod bobs brand greek salad dressing (for widwesterners, you CAN buy it at meijer)

cut lettuce as for salad, put in bowl
slice olives width-wise into about 3 or 4 slices per olive, put in bowl
peel, cut bottom off onion, score in cross-hatch style (cut but dont slice through... cut lengthwise and then widthwise like in an X) then slice onion so you get tiny diced bits without the effort ^_~... in bowl
then dice tomatoes into small bits (put in salad bowl with other goodies)
mash entire container of feta (do half at one time) usin fork, literally mash it into tiny tiny crumbles, then scrape into bowl
add dressing, do not use more than 1/4 cup. fyi, its STRONG and you will be SORRY if you do :)

best burgers ever:

1lb of hamburger (makes 4 burgers or 3 huge ones)
1/4 cup worcestershire sauce
1 T chopped basil
1 T chopped parsley
1/4 t salt
1/8 t ground black pepper
a few shakes of onion powder
(optional, some bits of diced sweet onion)

defrost hamburger until is no longer frozen at all
mix everything together
make hamburger patties
grill.

i try and cook alot... that up there is the standard summer dinner, all veggies are fresh from my grandparents garden :)... i'd try and come up with oher things, but i have no recipe for paella -- that turned out to be "empty the contents of the fridge into a pot" ... likewise, i havent figured out what i want to do with my couscous yet. if i ever find them, ill post pie recipes. i can make pie like whoa.

Here's a few tried and true favorites in my family...

Sophie Storms Sugar Cookies

1/2 c. butter
1/2 c. shortening
1/2 c. white sugar
1/2 c. brown sugar
1 egg
1 tsp. vanilla
2 c. flour
1 tsp. salt
1/2 tsp. cream of tartar
1 tsp. baking soda

Cream butter, shortening and sugars; add egg and vanilla. Stir in dry ingredients. Chill. Form into small balls, roll in white sugar. Bake at 375* for 12 mins.

Glazed Salmon Cocktail Balls

Balls

2 c. cooked, flaked salmon
3/4 c. bread crumbs
2 T. flour
1/4 c. grated onion
1/2 c. chopped water chestnuts
1/2 tsp. salt
1/4 tsp. Tabasco sauce
1 egg (beaten)

Thoroughly mix all of the above. Shape into 3/4" balls. Place in greased baking dish and bake at 375* for 20 minutes. Put in chafing dish.

Glaze

1 c. orange marmalade
1/4 c. vinegar or sweet pickle juice
1/4 c. butter
1/2 c. ketchup
1 T. soy sauce

Combine all. Heat to boiling. Let simmer for 5 minutes. Pour over balls.

Hawaiian Chicken

8 chicken breast quarters
1/4 c. mustard
1/4 c. molasses
1/4 c. vinegar
2 T. soy sauce
1/2 c. crushed pineapple
1/4 c. brown sugar

Rinse chicken and pat dry. Arrange in baking dish. Combine mustard, molasses, vinegar, soy sauce, pineapple and brown sugar in dish. Mix well. Spoon over chicken. Bake at 325* for 1 hour or until chicken is tender, basting frequently.

*Note: If you serve the Hawaiian Chicken with rice, you can use the leftover sauce as a "gravy" for the rice.

I have an excellent recipe .. It's from the kraft website but my it is good .. it received someother names but is this a children's show ?

Its a COCONUT CANDY BAR CAKE !!!

Here's the recipe - it is pretty easy for a "from-scratch cake"

The Big "O" Cake

ooh did I give it away !!!

wsucougarchick05 - February 8, 2005 05:39 AM (GMT)
"Pink Stuff" (No name, we just call it "Pink Stuff")

Cool Whip (or no-name Cool Whip, it doesn't matter)
Cottage Cheese
Can of Fruit Cocktail (or you can chop up different kinds of fresh fruit, I've had both versions and both are yummy nummies)
Red (any flavor) Jell-O powder (don't prepare it!)

Combine everything in a bowl (easiest: make it in the bowl you're serving it in) and stir until consistently pink throughout. The size really depends on how much you're making, but a small container of cottage cheese, cool whip and Jell-O along with a normal size can of Fruit Cocktail goes a looooong way.

Ok cheese lovers...... lol.

Chicken Roll Ups

1 can Cresent Rolls
1 Bag cheddar cheese
1 can cream of chicken soup
3 or 4 boneless skinless chicken breasts
about 1 cup milk

Boil some boneless chicken and tear or cut it into SMALL chunks.
Spray glass bake dish with Pam or oil lightly. Lat out cresent rolls flat and play a decent amount of chicken and cheese inside and wrap cresent around it. Place all the cresent rolls in the dish and set aside.

Preheat oven to 350. Pour Chicken soup and milk into a bowl, only pouring in enough milk to make the consistancy of a thick soup. Pour mixture over cresent rolls and top with cheese.

Bake until cresent rolls are golden brown. VERY VERY GOOD!
