Black Sabbath- Master of Reality. Even more than Paranoid, it defines their ugly, EVIL sound (those are good adjectives in this case)
Suicidal Tendencies- How Will I Laugh Tomorrow...(When I Can't Even Smile Today)?
Van Halen- Women and Children First. "1984" was their most commerically succesful, but the album that sums up their "party, get drunk n' fuck" mentality would be this one.
Bad Brains - self-titled/debut album. Amazing hardcore/punk diddies and a few reggae tunes.
If you count live albums (and I really don't), then "KISS- Alive" would be up here.

Frankly, it's a toss-up between those two. I love "I Against I", but it has a slightly more metallic slant than what they're known for. I think of them as a raw, crunching live band...and that comes across better on the first album than it does on the higher production and polish of "I Against I".
When I hear the first album, I can visualize them on stage playing the stuff. On "I Against I", I visualize them in the studio.

The Chronic is pretty much a classic example of a defining moment. To that I'd add Me Against the World for 2pac, though it's probably arguable. Also:

A bit of a tangent here, but a buddy and I started wondering: "when's the last time Snoop Dogg had a hit?". We had to go back to 1994's medicore "Murder Was the Case". We're not rap fans by any means, but we couldn't think of a single Snoop Dogg hit since then. He survives by being a "personality" by doing spot bits, showing up on commercials and playing golf with Lee Iacoca.

Hee...well I'm an old fuddy duddy, cuz' I'm completely unfamiliar with that tune :)
Back on target, Porkins:
Iron Maiden- "Number of the Beast".
EVIL shrieks, dual guitar solos and their signature sound. Some fellers pick "Powerslave", but that has alot of filler on the second side, plus the borrrrrrring 14 minute "Ancient Mariner". "Number of the Beast" only has two filler tracks.
The Police- Synchronicity (although I'm kinda' partial to Zenyatta Mondatta)
Blue Oyster Cult- Fire of Unknown Origin (or Agents of Fortune. take yer' pick)
Metallica- Master of Puppets (apparently, they stopped putting out albums after this one. Whatever happened to this band?)

I agree on Maiden and the Police, but not Metallica. Though Metallica fans may hate the idea, the black album is definitely their definitive album.
