My sleep test showed I have an AHI of just a bit above 5. I know that is considered mild, but I sometimes go over a minute without breathing, and my oxygen level dipped to 69% at one point. Is that unusual, or do a lot of people have oxygen levels that low?

This is an excellent example of why your AHI doesn't tell you everything. An AHI of 5 is about as mild as OSA gets, but a nadir 02 desat of 69% is usually associated with a moderate or even severe case of OSA.
That's about the level of 02 desaturation I get during a sleep study, and my AHI is typically >80 events per hour without PAP therapy.
It's probably a good idea to discuss this with your doctor or sleep therapist to see how they feel about AHI vs. 02 desaturation.
