The short answer to your question is yes. If you suffer from obstructive sleep apnea, it may prove difficult for emergency medical staff to intubate you.
For this reason, it is important to let your doctor know about your OSA prior to any procedure where the use of general anesthesia is contemplated.
Personally, I don't worry too much about an accident or other emergency. If they can't intubate me, they'll just do an emergency tracheotomy. Like Larry the Cable Guy says, "Git-R-Done".
