Thank you dear Melanie! We had our dinner yesterday and even though I won't eat mashed potatoes, stuffing, or gravy, I still had a really nice meal (I subbed those sides for acorn squash, sweet potatoes, and carrots) :D It was quite yummy that way too! I will have the same next month for MY Thanksgiving! :lol:

why won't you eat mashed potatoes?
I don't like stuffing or gravy either, but I do like MP with butter instead of gravy... and some cheese on top.
I NEVER KNEW that Canadians celebrated Thanksgiving on a different day! I guess it makes sense.... I just don't know much about anything outside the US. I'm geographically challenged. (is THAT even right?)

Cindie, Erin could definitely explain it better than me, but just to give you an answer, it's part of her diet to not eat certain kinds of carbohydrate heavy foods. Plus, most gravy is made from (over) processed white flour and grease! :blink: (we need a 'grossed out' emoticon)
I think it is so cool that you get to still celebrate your U.S. Thanksgiving Erin. Do you go to your parents for the holiday or does Mike and his family just accomodate you there in Canada? LOL, hope I'm not being too nosey here.

Yep! As Melanie said, I stick to carbs that are known as "good" carbs, like sweet potatoes and whole grained products (like 100% whole wheat breads and pastas, and brown or wild rice). I eat "good" fats as well, which include oils like canola and olive and nuts and peanut butter. All of the foods I eat have a low GI (glycemic index) which means that it is much slower for the body to break down and in turn, is less likely to turn to fat. The slower your body breaks down your food, the better for your body to metabolize because glucose is being released slowly into the digestive system. Higher GI foods are usually processed foods (like white enriched products, like breads and cereals) and are quickly metabolized and many times will turn to fat.

And Melanie, some years I do go home for Thanksgiving but most of the time I celebrate it quietly with Mike. Since he *loves* turkey it is more than okay with him. :lol:

Ah I figure as long as you exercise off those calories, you are being good to your body. I know how hard it can be to really want a particular food. I DO love mashed potatoes but I have found that I love sweet potatoes with a little margarine and cinnamon just as much! Kinda surprising...
I am also a huge pasta lover but I can still have my whole wheat pasta and I even like it better than the enriched stuff. Weird... lol :)
